This was made on Something For The Weekend last week. Angela Hartnett was filling in for Simon Rimmer as the resident chef. I wanted to try this because months ago, I bought a bag of amaretti biscuits from Gunton’s. It has been there ever since! When I saw this recipe, I thought it would be a great way to use the biscuits (before they go past their best before date!). I have a few tweaks planned for it, but it’s come out quite beautifully, if I may say so myself 🙂
