Cornbread

1 1/2 cups cornmeal (or polenta)
1/2 cup flour
1/4 cup butter or bacon fat, melted & cooled
1 1/2 cups sour cream
2 teaspoon baking powder
1/3 cups sugar
2 teaspoons salt
1/2 teaspoon baking soda
2 eggs, beaten

  • Mix all the dry ingredients together.
  • Mix the eggs, sour cream and melted butter together.
  • Then add the dry ingredient mix a fourth at a time.
  • Place in a greased and line pan (I use a 9×12 pan).  Bake in an oven preheated to 220C for 20-23 minutes.
